Sweet Surprises

IMG_0347 This morning started out horribly, but it definitely got better as the day went on.  At lunch Liz & I went to Sonic to get a drink.  They have a new drink that has mango, pineapple and cherries, and it looked good so I decided to try it.  I do NOT recommend it.  I did not think it tasted very good.  Anyways, on the way home Bro. Atkinson called and said they had more furniture they wanted to give me if I wanted it.  They brought over this computer desk, and it fits PERFECTLY into this space as if it were built just to go there.

IMG_0349 They also gave us this gorgeous dresser, which is now in Autumn’s room to help house all of her clothes not to mention dolls and blankets and purses and shoes and toys.

IMG_0309  Liz & Liberty called to say they wanted to come over and try a yummy new dessert.  They are such good friends and I am so thankful to have them in my life.  Here Liz is chopping up chocolate.

IMG_0310 This is what we made…it’s toffee, but it is SO EASY and SOOOOO DELICIOUS!  You’ll never believe what the secret ingredient is…saltine crackers!  The recipe is below and this is definitely one that I will be making multiple times a year.

35 saltine crackers
1/2 c (1 stick) butter
1/2 c packed light brown sugar
1 pkg (8 squares) Baker’s semi-sweet chocolate, chopped
1 c chopped walnuts

Heat oven to 400 degrees.
Place crackers in a single layer in foil-lined 15x10x1-inch pan.
Cook butter and sugar in saucepan on medium-high heat until butter is melted and mixture is well blended, stirring occasionally.  Bring to boil; cook 3 min WITHOUT stirring.  Spread onto crackers.
Bake 5 to 7 min or until topping is golden brown.  Immediately sprinkle with chocolate; let stand 5 min or until chocolate is softened.  Spread melted chocolate evenly onto the toffee.  Sprinkle with nuts.  Cool. Break into pieces.

IMG_0313 While we waited for the toffee to cool, we went and fed the ducks the left over saltine crackers and just enjoyed the nice weather outside.  Once it got dark, we came back and tried out the toffee.  As you can see, both Liz & Autumn loved it.  What a fun evening w/ new furniture, good friends and good treats.
