More Rain & More Food

IMG_1422 Today was AWESOME, b/c it rained again. I absolutely LOVE the rain. Dad picked up Autumn at daycare today, so I stopped at WalMart on the way home to pick up a few groceries. The power went out AGAIN for just a few seconds, just like the other day. It was raining so hard that I put my purse in a plastic bag and grabbed my other 3 bags of groceries and took of my flip flops and just made a run for it to my car. I knew if I kept my flip flops on, that they would slip and make me trip, so I just took them off.

IMG_1424 I went over to Mom & Dad’s to get Autumn and just ended up spending the evening over there. I had another hankerin’ and made Liz Salsa (Liz is Maggie’s daughter and she’s the one that first shared this salsa w/ me, so that’s why I call it Liz Salsa). The longer you let it marinate (like overnight), the better it tastes. Here is the recipe mom Mom & I kind of used last night:

1 can black beans (rinsed)
1 can kidney beans (rinsed)
1 can corn (drained)
1 large tomato, cut up
2 avocados, cut up
1 bunch of cilantro, cut up

Mix the following together and then pour over the above ingredients:
1 packet dry Italian dressing
1/4 c balsamic vinegar
1/2 c oil
2 Tbs water

IMG_1425 I was also craving some sweet potato fries, so I tried making some. They didn’t turn out quit the way I had expected, but they were still good.

2 lbs sweet potatoes
1/4 c oil
1 tsp salt
1 tsp pepper

Cut up the sweet potatoes into thin strips. Place on a cookie sheet covered w/ tin foil. Pour the oil over the sweet potatoes and use your hands to roll the sweet potatoes around in the oil to coat them evenly. Sprinkle the salt and pepper over the sweet potatoes. Bake at 425 degrees for 30 min, turning every 10 minutes. I put the oven on broil for the last 2-3 minutes just to get them crispy.

We just hung out and watched TV together. The NBA Hall of Fame Inductions for 2009 were on and we watched that. Michael Jordan was inducted, and it was really really good. He was funny and entertaining and well spoken. He is such an incredible athlete. I thoroughly enjoyed watching it. This guy in this article, however, does NOT agree w/ me. He said Jordan was petty and playing a bully. I can also see his point.

Then 300 was on TV, so we watched that. I love that movie (except for the 3 naked parts, but they were edited out for the TV version). It was just a nice and relaxing evening.

Woah. I didn't know we had Racheal Ray up in the house. :) That salsa looks good though. I'll have to try it.
I miss you by the way!
