Happy St. Patrick’s Day 2010

IMG_3790I’m usually not one to celebrate “small” holidays like St. Patrick’s Day. However, it’s so much more fun to make a big deal about it and do special things as opposed to it being just another Wednesday. We had planned last week to have a pot luck lunch today at work. Heather brought her awesome lime green wig, and Tim tried it on. He looked like an Ooompa Loompa in the green wig and his orange work shirt. Heather also made this awesome shamrock shaped green cake.

IMG_3791 For our potluck lunch we had the green shamrock cake, green pistachio pudding fruit salad, soda in a green bottle, green grapes, and taco meat wrapped in a green tortilla. It was so much fun!

IMG_3794 I was all decked out and looking festive in my St. Patrick’s Day gear. I had on my black shirt w/ lime green trim, green bracelet, shamrock head band, and shamrock earrings.

IMG_3799 After work, we went to a fabulous Irish dinner at Rachel’s house. When I saw her in the foyer at church on Sunday she said that her and Lane wanted to invite Autumn & I & Liz & Liberty over for dinner. We had potatoes, carrots, cabbage, and corned beef. It was super good.

IMG_3797 Autumn & Jane were such cute little friends and played together so well. Autumn loved having lots of fun new toys to play with.

IMG_3798Elliot is such a cutie pie and has the most gorgeous, big, blue eyes.

IMG_3801 It is such a SMALL WORLD, b/c of how I even know Rachel (see below). And, not only is that a small world, but to make it even smaller, Lane was assigned to be Liz & Liberty’s home teacher! What are the chances?

IMG_3802 Lane & Rachel are such a cute couple. I love how they interact w/ each other and their kids. I told them to smile so I could take a picture and Lane pretended to eat the formula that he was using to make Elliot a bottle.

2001 T13 I never cease to be amazed at how things turn out in life. Rachel & Tara lived on the same floor in the dorms their Freshman year of college and I was an RA in that dorm the same year. Then they lived together off campus for a while. When Tara & Rachel & I took this picture back in Dec 2001, I could never in a million years have guessed that almost 9 years later how different our lives would be. Tara is no longer with us on this Earth, Rachel is married w/ 2 adorable children, and I am a single divorced Mom. Who would have ever guessed back then that I would date Tara’s widow? Who would have ever thought that of all the places in the world to live that Rachel & I would end up in the same city and even the same ward??? Who would have even considered the possibility that Rachel & I would be having St. Patrick’s Day dinner together with our families, but w/out Tara?

I don’t know why certain things happen in our lives, but I do know it all has a meaning. I am thankful that Rachel & I have been able to reconnect after all these years. I honestly didn’t know Rachel super well back in college other than just hanging out w/her & Tara a few times. However, I am so incredibly grateful that we are such good friends now. I love that I can talk about Tara w/ her and that she knows and loves Tara as much as I do. I’m sure Tara is so happy that Rachel and I are such good friends now. We just wish she could be here to enjoy it w/ us but since she can’t, we’ll remember all the good times we had with her. Rachel and her cute little family are so wonderful.

We had to leave around 8:00 so I could get Autumn home and give her a bath. After she went down, I was watching TV and there was a commercial w/ a lady eating a no bake cookie, and I had a hankerin’ after seeing that and we all know you can’t deny a hankerin’. So, Michael looked up the recipe for me online (I don’t have internet at home). They totally hit the spot and here is the recipe I used:

No Bake Cookies

2 c sugar
4 Tbs cocoa powder
1/2 c milk
1/2 c butter
1 tsp vanilla
1 pinch salt
1/2 c smooth peanut butter
3 1/2 c oats

In a saucepan, melt sugar, cocoa, milk, and butter together. When it is at a rolling boil, time it for 1 1/2 minutes and then remove from heat. Add the vanilla, salt, peanut butter and oats. Drop by spoonful onto waxed paper and let cool.
