Erin & Russ & Jackson

IMG_6231 I got off work 15 minutes early today (YEAH!) and went and got Autumn and we stopped at WalMart to pick up a few groceries. We came home and had a little bit to eat to tide us over until dinner w/ Erin & family later on, and then we made a funfetti cake to take to Erin’s tonight. And of course Autumn wanted to help stir (and taste) the cream cheese frosting.

IMG_6238 This was the AMAZING view on the drive out to her house. I took this while driving (don’t worry, I didn’t look through the viewfinder, I just held my camera up and hoped I got some good shots), which was not a good thing to do, especially after what we saw right before we got to her house…

IMG_6239 …there was this HORRIBLE accident. All those people in the middle of the picture were gathered around a person that was lying in the middle of the road and I think they might have been dead from the looks of the motorcycle they were driving. It was completely crushed to pieces and I got so sick to my stomach when I saw how bad it looked. I said a silent prayer that they would be in as minimal pain as possible and that they and their family would be comforted. So scary!

Erin’s husband, Russ, made us some perfectly grilled hot dogs and the most amazing Velvetta cheese noodles. They had sautéed mushrooms, cilantro, sour cream, and green onions in them and were fantastic. Definitely a recipe I’ll have to try and recreate b/c it was so dang good. After dinner we sat and talked while Autumn played w/ Russ’ cars and Autumn wanted Erin to braid Ariel’s hair like Autumn had hers.

IMG_6241 It was such a wonderful and relaxing evening. Russ and Erin are so laid back and easy going and I felt right at home. I LOVE having friends like that…where you just pick up right where you left off. They have such a warm and welcoming home and we will definitely have to plan to get together again soon. Thanks for a LOVELY evening, Erin & Russ!
