Musicals & Coconut Cookies

IMG_0589 This morning was a nice and lazy Sunday morning.  I think I’m addicted to Sandra Lee’s new show on the Food Network called Money Saving Meals.  She breaks down the cost of everything she uses and how much it is per serving.  It’s amazing what she can make for under $30!!!  I’m going to have to go on the website and try some of her recipes.  Anyways, we got ready for church and then guess what was on right before we walked out the door…Oliver!  I let her watch a few minutes of it and then we left for church.  I am glad she likes musicals, b/c I definitely do.  Some of my top favorites are Hello Dolly, Newsies, Thoroughly Modern Millie, Les Miserables, Phantom of the Opera (Michael Crawford version), Joseph & The Amazing Technicolor Dreamcoat (Donny Osmond version), etc…  I’m excited to introduce Autumn to all of these great classics.

IMG_0592 I had a sweet tooth this afternoon after church and I had some coconut I needed to use.  There was a recipe on the bag and is so simple and uses ingredients that I had around the house.  These cookies were so light and fluffy and scrumptious.  Y’all need to try them.  Here’s the recipe:

2 egg whites
1 dash salt
1/4 tsp vanilla
2/3 c. granulated sugar
1 1/2 c. sweetened flaked coconut

Preheat oven to 325 degrees.
Beat egg whites, salt, and vanilla until soft peaks form.
Gradually add sugar, beating until very stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon about 2 inches apart onto greased cookie sheet.
Bake at 325 for about 20 minutes or until set and lightly browned.
Cool on wire rack.
Eat them & ENJOY them!
